Spray the 9-inch spring pan with non-stick cooking spray. Set aside.

Place the chopped chocolate and butter in a large microwave-safe bowl.

Microwave on high in 30-second increments, stirring until the chocolate is fully melted and smooth. Let the mixture cool at room temperature for 5 minutes.

.Add the egg, sugar, vanilla extract and salt in a large bowl and stir them. Stir them with a stirrer at high speed for 3-4 minutes until the mixture is white, frothy and almost doubled in volume.

Pour the egg liquid into the melted chocolate. Gently fold with a rubber spatula until the butter is smooth and no yellow streaks of egg remain.
